Material
300g peeled garlic, 330g fine red pepper powder, 500g sticky rice,
150g of malt oil powder, 100g of roasted salt, 30g of fermented soybean paste powder,
3 tablespoons of acacia honey, 1L of water1. After washing glutinous rice 2-3 times, put it in a rice cooker, pour water, and cook it the same as cooking white rice.
After cooking, cool the glutinous rice and mix it with 1L of water and malt powder.2. The glutinous rice mixed with malt powder is fermented in the rice cooker for more than 6 hours.
It's fermented when the rice grains float!
When the rice comes out, boil it over high heat
Remove the foam from time to time and bring to a boil for 5 minutes,
After simmering, let cool for a while.3. After cooling down, put it on a fine sieve to filter out sticky rice as much as possible and receive only clear soup.
Boil the clear soup for about 20 minutes. Likewise, remove the foam!
4. Pour the boiled soup into the pot and cool it completely
Add fine red pepper powder and fermented soybean lump powder little by little and mix.
5. When all the red pepper flakes are mixed, add the roasted salt and mix!
Stir evenly using a spatula when you feel the red pepper paste has become stiff.6. After mixing them all, let the red pepper powder soak at room temperature
Leave it for more than 6 hours and put it in a jar.
After putting it in, put it in the refrigerator right away and age it!
